So simple and yummy! Gluten and dairy free!

INGREDIENTS:

3 Cups Rice Krispies cereal (or other crunchy cereal you have on hand).

1 scoop protein powder

1/2 C Shredded unsweetened coconut

1-1/2 C Chocolate Chips

1 C Peanut Butter (smooth or crunchy)

1/3 C Maple Syrup (I cut to 1/4)

1/2 C Coconut oil

1 tsp vanilla


PREPARATION:

  • Melt together on low heat in saucepan all except cereal, protein powder and coconut. 
  • Stir well until smooth and combined. 
  • Remove from heat and let cool slightly. 
  • Mix in protein powder and coconut and lastly cereal. 
  • Blend well. 
  • Press into parchment or wax paper- lined pan and chill for at least an hour. 
  • Cut and enjoy!
  • Store in sealed container in the fridge.
